Cottage Cheese Chocolate Chip Cookies🍫🍪 High-protein Cookie!

I tried out a new recipe for the Viral TikTok cottage cheese Chocolate Chip Cookies. They soft and delicious cookies are high protein, lower carb, and gluten free, but full of chocolate chip cookie flavor! If you are looking for a delicious chocolate chip cookie without all of the calories and points and guilt of a traditional cookie, these are the ones for you!

How to Make This:

Ingredients:

  • 1 cup cottage cheese (I used 2% milkfat)

  • 1/2 cup unsweetened applesauce

  • 1/2 cup Lakanto classic (or sugar free sweetener or choice)

  • 1 tsp vanilla extract

  • 1 large egg

  • 2 cups almond flour

  • 1 scoop (31g) Isopure zero carb vanilla protein powder

  • 1/2 tsp baking soda

  • 1/2 tsp baking powder

  • 1/4 tsp salt

  • 8 servings (112g) Lily's chocolate chips

Instructions:

  1. In a blender or food processor, add the cottage cheese, applesauce, Lakanto, vanilla extract, and egg. Blend until smooth and creamy.

  2. In a medium bowl, add in the almond flour, protein powder, baking soda, baking powder, and salt, and whisk until well combined.

  3. Add the wet ingredients to the dry, stirring until just combined. Be careful not to overmix.

  4. Fold in the Chocolate Chips.

  5. Refrigerate dough for ½- 1 hour before baking

  6. Preheat the oven to 350°F.

  7. Line a baking sheet with parchment paper or a silicone baking mat.

  8. Drop dough in 2 Tbsp amounts (I used a 2 Tbsp cookie scoop) 2 inches apart on the prepared baking sheets. You should have about 20 cookies.

  9. Bake cookies in preheated oven at 350F for 13-16 minutes or until they are brown and centers are set.

  10. Let cookies cool on cookie sheets about 5 minutes before transferring to a wire rack to cool completely.

  11. Enjoy!
