Skinny Crustless Cottage Cheese Quiche
This easy, high-protein, low carb, crustless quiche is delicious and will keep you full a long time!
How to Make This:
Ingredients:
6 large Eggs
24 oz 1% low fat cottage cheese
16 oz Mushrooms, sliced
9 oz Green Giant Steamers Frozen chopped spinach
1 medium Onion
1⁄2 cup Plain unsweetened almond milk
1⁄3 cup Shredded parmesan cheese
2⁄3 cup Lucerne Low-moisture part-skim mozzarella finely shredded cheese
1 tsp Garlic powder
1 tsp Dry mustard
1⁄4 tsp Black pepper, to taste

Instructions:
Steam and squeeze dry spinach.
In a large pan on medium heat, sautee mushrooms and onions until softened.
While veggies are sauteing, add eggs, cottage cheese, milk, garlic, dry mustard and black pepper to a blender or food processer and blend until smooth.
Once veggies are softened, add in spinach and let all continue to cook together for 3-5 minutes. Prepare 2 pan(s) with cooking spray (I used pie pans) and add sauteed veggies to bottom(s).
Top with cheeses.
Pour egg mixture on top.
Bake, uncovered at 350 F 35-45 minutes or until egg is set in the middle and it is slightly browned.
