Skinny Crustless Cottage Cheese Quiche

This easy, high-protein, low carb, crustless quiche is delicious and will keep you full a long time!

How to Make This:

Ingredients:

  • 6 large Eggs

  • 24 oz 1% low fat cottage cheese

  • 16 oz Mushrooms, sliced

  • 9 oz Green Giant Steamers Frozen chopped spinach

  • 1 medium Onion

  • 1⁄2 cup Plain unsweetened almond milk

  • 1⁄3 cup Shredded parmesan cheese

  • 2⁄3 cup Lucerne Low-moisture part-skim mozzarella finely shredded cheese

  • 1 tsp Garlic powder

  • 1 tsp Dry mustard

  • 1⁄4 tsp Black pepper, to taste

  • cooking spray

Instructions:

  1. Steam and squeeze dry spinach.

  2. In a large pan on medium heat, sautee mushrooms and onions until softened.

  3. While veggies are sauteing, add eggs, cottage cheese, milk, garlic, dry mustard and black pepper to a blender or food processer and blend until smooth.

  4. Once veggies are softened, add in spinach and let all continue to cook together for 3-5 minutes. Prepare 2 pan(s) with cooking spray (I used pie pans) and add sauteed veggies to bottom(s).

  5. Top with cheeses.

  6. Pour egg mixture on top.

  7. Bake, uncovered at 350 F 35-45 minutes or until egg is set in the middle and it is slightly browned.

  8. Enjoy!
