Crustless Vanilla Cheesecake
I tried out a new recipe from the WW app for 0 pt cheesecake that is made with cottage cheese, to see what we thought. I found it to be pretty good, especially for zero pts. It is perfect for anytime you want a guilt free, zero point dessert!
How to Make This:
Ingredients:
4 cups Fat free cottage cheese
2⁄3 cups Monk fruit sweetener with erythritol(or calorie free/pt free sweetener of choice)
1⁄2 cup Plain fat free Greek yogurt
1 1⁄2 Tbsp Vanilla extract
3 large eggs Eggs
1 cup Raspberries
Cooking spray
Instructions:
In a food processor(my food processor is a 9 cup and it barely fit), blend the cottage cheese until smooth, about 2 minutes, stopping occasionally to scrape down the sides.
Add the monk fruit sweetener, yogurt, and vanilla; process until well combined.
Add the eggs; process until smooth.
Spray a springform pan (mine was 9 1/2-inch) with cooking spray. You can wrap the outside of the pan with foil as the instructions on the WW website says, but I would suggest using several layers of foil or even better, place it in or on an oven safe dish to prevent any leakage from making a mess.
Pour the batter into the prepared pan.
Bake at 350F until the cheesecake is golden around the edges and still a bit wobbly in the center, 1 hour 5 minutes to 1 hour 15 minutes.
Remove the cheesecake from the oven and cool to room temperature.
Cover and refrigerate until completely chilled and set, at least 3 hours.
Remove the sides of the pan.
Cut into 8 slices.
Top the cheesecake with raspberries before serving.
