High Protein Cottage Cheese Alfredo Sauce

This high protein sauce uses cottage cheese instead of cream and it cuts the calories way back without cutting out the flavor!

How to Make This:

Ingredients:

  • 1 1⁄2 cups 1% low fat cottage cheese

  • 3⁄4 cup Plain unsweetened almond milk

  • 1⁄2 cup Grated Parmesan cheese

  • 1 Tbsp Jarred minced garlic

  • 2 Tbsp Olive oil

  • 2 Tbsp Cornstarch

  • 4 Tbsp water

  • 8 oz, unprepared Barilla Whole Grain 100% Whole grain linguine, dry

  • 1⁄8 tsp Black pepper (or to taste)

  • 1/2 tsp salt (or to taste)

  • 1⁄8 tsp Ground nutmeg

Instructions:

  1. Add the cottage cheese, milk, and Parmesan to a blender or food processor.

  2. Blend on high speed until creamy, thick, and smooth. about 1 minute. Set aside.

  3. Cook the pasta following the packaging instructions for al dente pasta.

  4. Drain, reserving about 1/2 cup of the pasta water. Set pasta aside.

  5. In a medium saucepan, over medium heat, add olive oil and sautée the garlic until fragrant, about 1 minute.

  6. Pour in the cottage cheese mixture, and stir. Bring to simmer.

  7. Once it begins to simmer, reduce the heat to low. The sauce will separate out, and be watery while the cheese will be lumpy, this is normal.

  8. In a small bowl, whisk cornstarch with water together to make a slurry.

  9. Whisk in the slurry to the sauce and continue to cook and whisk occasionally until the cheese breaks down and the sauce thickens and becomes creamy. This took me about 20 minutes.

  10. Stir in nutmeg, pepper and salt to taste.

  11. Add cooked pasta to sauce and stir until well coated.

  12. You can add pasta water to thin out sauce if you wish and get desired consistency.

  13. Enjoy!
