Easy Cottage Cheese Egg Bites🥚🧀

These easy, low carb, protein packed egg bites are the perfect WW friendly breakfast meal prep!

How to Make This:

Ingredients:

  • 12 large Egg 1 cup

  • 1% low fat cottage cheese

  • ½ cup Lucerne Dairy Farms Reduced Fat Mexican Style 4 Cheese Blend

  • 1/2 (chopped) Green bell pepper

  • 1/2 (chopped) Red bell pepper

  • 1/3 cup (chopped) Onion

  • 1/3 cup (chopped) Broccoli

  • 1/2 tsp Granulated garlic

  • 1 tsp Dry mustard

  • 1 tsp Dried parsley

  • 1/2 tsp Table salt

  • 1/2 tsp Black pepper

  • Cooking spray

Instructions:

  1. In a large pan on medium heat, saute veggies until softened.

  2. Set aside and let cool slightly.

  3. In a medium bowl, whisk together eggs, salt, pepper, garlic, parsley and mustard.

  4. Stir in cottage cheese and cheese.

  5. Fill muffin cups about 2/3 full and bake at 400 for 13-15 minutes or until set.

  6. Enjoy!
