Easy Cottage Cheese Egg Bites🥚🧀
These easy, low carb, protein packed egg bites are the perfect WW friendly breakfast meal prep!
How to Make This:
Ingredients:
12 large Egg 1 cup
1% low fat cottage cheese
½ cup Lucerne Dairy Farms Reduced Fat Mexican Style 4 Cheese Blend
1/2 (chopped) Green bell pepper
1/2 (chopped) Red bell pepper
1/3 cup (chopped) Onion
1/3 cup (chopped) Broccoli
1/2 tsp Granulated garlic
1 tsp Dry mustard
1 tsp Dried parsley
1/2 tsp Table salt
1/2 tsp Black pepper
Cooking spray
Instructions:
In a large pan on medium heat, saute veggies until softened.
Set aside and let cool slightly.
In a medium bowl, whisk together eggs, salt, pepper, garlic, parsley and mustard.
Stir in cottage cheese and cheese.
Fill muffin cups about 2/3 full and bake at 400 for 13-15 minutes or until set.
