Cottage Cheese Cookies With Cream Cheese Frosting🍪 Lightened Up
These lightened up, cottage cheese icebox cookies with cream cheese frosting were so easy to make and another great way to use cottage cheese! The soft, lightly sweet cookies paired great with the cream cheese frosting to make a low point sweet treat!
How to Make This:
Ingredients:
1/2 cup 1% low fat cottage cheese
4 Tbsp Brummel & Brown Spread Made with Yogurt
1/4 cup Unsweetened applesauce
1/½ cup All-purpose flour
1/2 cup Lakanto Classic Monkfruit Sweetener With Erythritol
2 tsp Baking powder
1/2 tsp Table salt
1/4 cup Lakanto Monkfruit Sweetener, powdered
1 Tbsp Plain fat free Greek yogurt
1/2 tsp Vanilla extract
4 oz Low fat cream cheese
Instructions:
In a medium bowl, mix together flour, baking powder and salt.
In a mixer or by hand Cream together butter spread, applesauce, Lakanto classic and cottage cheese until blended.
Add dry ingredients to cottage cheese mixture and stir until combined.
Form dough into a log. Wrap in plastic wrap and chill for at least 3 hours or overnight in the refrigerator.
Cut into 16 slices and place slices 2 inches apart on a baking sheet lined with parchment paper.
Bake at 375°F for 12 –14 minutes or until lightly browned.
Let sit for about 5 minutes then place on cooling wrack.
Let cool completely before frosting.
For the Cream Cheese Frosting: In a large bowl beat together the cream cheese, Tbsp Greek yogurt, powdered sweetener and 1/2 tsp vanilla until no lumps remain.
Frost the cookies when cooled. About ½ tbsp of frosting on each cookie.
Refrigerate leftovers. I found they taste even better after sitting in the fridge another couple of hours!
