Easy Blueberry Cream Stuffed Cottage Cheese Pancakes🫐🥞

These easy stuffed pancakes were a viewer request. I used my favorite three ingredient cottage cheese pancake recipe for the pancakes (with a couple additions) and made a blueberry compote and cream cheese filling to fill them with.

How to Make This:

Ingredients:

  • 2 cups 1% low fat cottage cheese

  • 8 large Eggs

  • 1⁄2 cup Self-rising flour

  • 1⁄4 cup, plus 2 tsp Lakanto Classic Monkfruit Sweetener With Erythritol( 1/4 cup for compote, 2 tsp for pancake batter)

  • 1 1⁄2 tsp Vanilla extract (1 for batter, 1/2 for filling)

  • 4 oz Light cream cheese, room temperature

  • 2 oz Cool Whip Fat Free Whipped Topping

  • 1 1⁄2 cup Unsweetened frozen blueberries

  • 1⁄3 cup Water

  • 1 Tbsp lemon juice

  • 1 tsp Cornstarch

  • 1 1⁄2 Tbsp Lakanto Monkfruit Sweetener, powdered

  • 1 tsp Olive oil, for spraying pan

Instructions:

  1. In a medium saucepan, combine the blueberries, 1/4 cup lakanto classic sweetener, water, lemon juice, and cornstarch.

  2. Stir and bring to a boil over medium heat.

  3. Lower heat to low and let simmer for 10-15 minutes until it thickens.

  4. Remove from heat and allow to cool for a few minutes.

  5. For the cream cheese filling: add cream cheese, powdered sweetener and 1/2 tsp vanilla to a mixer and mix until smooth.

  6. Fold in the whipped topping until smooth.

  7. For the pancakes: add cottage cheese, eggs, flour, 1 tsp vanilla and 2 tsp granulated sweetener to blender and blend until smooth.

  8. Heat large pan on medium heat, spray with olive oil and pour 1/2 cup batter in the middle of the pan.

  9. Lift the pan up and twirl it so the batter stretches out.

  10. Cook until bubbles appear and break and the surface appears "dry" about 3-5 minutes.

  11. Flip then cook other side for about another minute.

  12. To assembly, spread about 2 Tbsp of the cream filling on one half of each pancake, followed by about 1 Tbsp of the blueberry compote. You can either roll them up or fold them in half and then half again.

  13. Enjoy!
