EASY Frozen Peaches & Cream CakeπŸ‘πŸ¦πŸ° Lightened-Up SUMMER Dessert! πŸ–οΈπŸ˜ŽπŸŒž

I tried out a new recipe from the WW app for this delicious and easy Summer dessert! This pretty layered dessert looks like it takes a long time to make but is so simple to put together! It's layers of fresh peaches, cake and frozen yogurt make for the perfect refreshing dessert on a hot summer day!

How to Make This:

Ingredients:

  • 11 oz Prepared angel food cake

  • 4 cups low fat frozen vanilla yogurt (570 g)

  • 1 Β½ lbs peeled and chopped peaches

  • Β½ cup Lakanto classic

  • 2 Tbsp lemon juice

  • 1 tsp Almond extract

  • Β½ tsp salt

Instructions:

  1. In a medium saucepan, combine the peaches, lakanto classic sweetener, lemon juice, almond extract and salt.

  2. On medium heat, Stir until mixture comes to a simmer. Lower heat to low and let simmer for 15 minutes.

  3. Once softened, mash about half of the peaches. Take off heat and let cool to room temperature or refrigerate.

  4. Cut angel food cake into ΒΌ inch slices.

  5. Once peaches are cooled, add frozen yogurt to a bowl and mash with a spoon until soft.

  6. Line bottom of a 9 inch round springform pan with 1/3 of the cake slices, cutting them to fit shape of pan.

  7. Top with half of the frozen yogurt, spreading it out.

  8. Spread half of the peaches over the frozen yogurt, then top with with half the remaining cake.

  9. Spread remaining frozen yogurt over the cake, followed by the remaining peaches.

  10. Top with remaining cake.

  11. Cover with plastic wrap and freeze for at least 6 hours or overnight.

  12. When ready to serve, let cake stand at room temp for 5 minutes before unmolding.

  13. Enjoy!
