Copycat Chipotle Steak Burrito Bowls🥩🌯

These burrito bows are one of my favorite WW lunch prep ideas that I have been making lately. They are a homemade copycat of Chipotle's burrito bowls with steak! These bowls include copycat versions of Chipotles steak, cilantro lime "rice", and fajita veggies. I also show what I top them with, copycat versions of Chipotle's Pico de Gallo and Guacamole . All of this comes together in one delicious bowl that tastes better than the restaurant for a lot cheaper and lower in WW points and calories!

How to Make This:

Ingredients:

  • 🥩Ingredients for the steak:

  • 16 oz Uncooked lean and trimmed beef flank steak

  • 1 Tbsp Adobo sauce

  • 1 Tbsp Olive oil

  • 1 tsp Garlic, minced

  • 1 Tbsp Chili powder

  • 1 tsp Ground cumin

  • 1 tsp Dried oregano

  • 1⁄4 tsp Black pepper

  • 🧅🫑Fajita Veggies Ingredients:

  • 1 large Red onion, sliced

  • 2 large Green bell peppers, sliced

  • 1 Tbsp Olive oil

  • 1 tsp Dried oregano

Instructions:

  1. For the steak:

  2. Mix all ingredients together, besides the steak, in a small bowl.

  3. Brush the steak with the prepared marinade on both sides.

  4. Cover the steak and let marinate in the refrigerator for 1-3 hours, overnight is best!

  5. Cook steak until it reaches your desired doneness. Let rest for about 10 minutes then cut into pieces.

  6. For the fajita veggies:

  7. Heat the oil in a large pan on medium-high heat.

  8. Add the sliced bell peppers and onion, oregano and saute for 7-10 minutes, or until the veggies have softened and are starting to caramelize.

    -Assemble bowls with whatever you want. I used steak, fajita veggies, beans and corn, and Copycat Chipotle Cilantro Lime Riced Cauliflower. I toped them with fat free Greek yogurt, Copycat Chipotle Guacamole and Copycat Chipotle Pico de Gallo!

  9. Enjoy!
