Copycat Chipotle Cilantro Lime Riced Cauliflower🍚
I show how to make a copycat of Chipotle's Cilantro Lime "Rice" using Riced Cauliflower. All the signature lime and cilantro flavors of the restaurant rice, but in lower carb and point cauliflower rice form!
How to Make This:
Ingredients:
1 medium Cauliflower head, riced (4 to 6 cups riced cauliflower)
1⁄4 cup Cilantro, chopped
1 Lime, juiced
1 Tbsp Olive oil
2 Bay leaves
1⁄2 tsp Table salt, to taste
1⁄4 tsp Black pepper, to taste
Instructions:
Grate cauliflower into “rice” using either a box grater, food processor or the grating attachment on a kitchen Aid. You want around 4-6 cups total.
In a large pan on medium heat, add and heat olive oil.
Add cauliflower and stir followed by bay leaves.
Cover and cook (stirring occasionally) for 8-10 minutes, or until the rice becomes slightly tender.
Turn off heat and remove bay leaves. Add cilantro and lime juice. Salt and pepper to taste.
Enjoy!
