Olive Garden Copycat Pasta Fagioli

This lightened up Copycat of Olive Gardens Pasta Fagioli is not only low point and calories but is so easy to make and absolutely delicious!

How to Make This:

Ingredients:

  • 16 oz Shady Brook Farms 93% lean ground turkey

  • 1 tsp Olive oil

  • 1 cup Uncooked carrot, chopped

  • 1 cup Uncooked celery

  • 3 cups Uncooked red onion, chopped

  • 2 tsp Minced garlic

  • 30 oz Canned beef broth

  • 24 oz marinara sauce, I used this homemade sauce

  • 15 1⁄2oz Canned kidney beans, rinsed and drained

  • 15 1⁄2oz Canned great northern beans, rinsed and drained

  • 15 1⁄2oz Canned cannellini beans, rinsed and drained

  • 1 medium Uncooked zucchini

  • 28 oz No salt added diced tomatoes

  • 2 Tbsp Italian seasoning

  • 1⁄4 tsp ground black pepper

  • 1⁄2 cup Water

  • 6 oz Uncooked whole wheat penne

Instructions:

  1. On medium/high heat, brown turkey in a large nonstick soup pot, set aside when done.

  2. In the same pot, heat olive oil.

  3. Add onions, carrots, celery, and garlic.

  4. Cook for 2 minutes. Stir often.

  5. Add drained turkey back to pot.

  6. Stir in canned tomatoes, beans, beef broth, marinara sauce, zucchini, Italian seasonings, and pepper.

  7. Bring soup up to a boil.

  8. Turn heat to a simmer, cover, and let cook for 50 minutes.

  9. Add pasta and water to soup.

  10. Cover and cook for about 10 minutes longer until pasta is ready.

  11. Enjoy!
