Lightened Up Crock-Pot Ham Potato Corn Chowder
This warm and cozy chowder is a perfect comfort food for the cold winter weather! I lightened it up to make it WW friendly and lower calorie!
How to Make This:
Ingredients:
1 1⁄2 pounds Uncooked potatoes, chopped into bite sized pieces
1 medium onion, chopped
1 cup Uncooked baby carrots, chopped
4 ribs, medium Uncooked celery, chopped
12 oz Frozen corn kernels
2 tsp Garlic, minced
4 cups Fat free chicken broth
8 oz Hatfield Traditional ham steak, chopped into bite sized pieces
1⁄4 tsp Black pepper
1⁄2 tsp Dried thyme
2 cups Plain unsweetened almond milk
2 Tbsp Cornstarch
1 cup Member's Mark Nonfat plain Greek yogurt
1 cup Kroger Reduced fat finely shredded sharp cheddar cheese
Instructions:
Place the potatoes, onions, celery, carrots, broth, corn, ham, garlic, pepper, garlic, and thyme in a 6 qt or larger slow cooker and cook, covered, on low for 7-8 hours or until potatoes are tender.
In a small bowl, mix the cornstarch and milk until smooth; stir into soup.
Cook, covered, on high for 20-30 minutes or until thickened, stirring occasionally.
Turn off heat and stir in cheese until cheese is melted. Stir in yogurt.
