Lightened Up Crock-Pot Ham Potato Corn Chowder

This warm and cozy chowder is a perfect comfort food for the cold winter weather! I lightened it up to make it WW friendly and lower calorie!

How to Make This:

Ingredients:

  • 1 1⁄2 pounds Uncooked potatoes, chopped into bite sized pieces

  • 1 medium onion, chopped

  • 1 cup Uncooked baby carrots, chopped

  • 4 ribs, medium Uncooked celery, chopped

  • 12 oz Frozen corn kernels

  • 2 tsp Garlic, minced

  • 4 cups Fat free chicken broth

  • 8 oz Hatfield Traditional ham steak, chopped into bite sized pieces

  • 1⁄4 tsp Black pepper

  • 1⁄2 tsp Dried thyme

  • 2 cups Plain unsweetened almond milk

  • 2 Tbsp Cornstarch

  • 1 cup Member's Mark Nonfat plain Greek yogurt

  • 1 cup Kroger Reduced fat finely shredded sharp cheddar cheese

Instructions:

  1. Place the potatoes, onions, celery, carrots, broth, corn, ham, garlic, pepper, garlic, and thyme in a 6 qt or larger slow cooker and cook, covered, on low for 7-8 hours or until potatoes are tender.

  2. In a small bowl, mix the cornstarch and milk until smooth; stir into soup.

  3. Cook, covered, on high for 20-30 minutes or until thickened, stirring occasionally.

  4. Turn off heat and stir in cheese until cheese is melted. Stir in yogurt.

  5. Enjoy!
