Chicken Pesto Pasta
This easy Chicken Pesto Pasta comes together in minutes and is so tasty and full of protein!
How to Make This:
Ingredients:
2 cups Uncooked whole grain pasta
3-4 cups Fresh baby spinach
1-2 cups fresh tomatoes, chopped
4 Tbsp Part-skim mozzarella cheese
16 oz Cooked skinless boneless chicken breast, chopped
1 tsp Minced garlic
1 tsp Olive oil
1⁄8 tsp Black pepper
4 Tbsp Basil pesto, I use my homemade pesto
Instructions:
Cook pasta and set aside.
In a large pan, heat oil and cook garlic for about a minute.
Add in tomatoes, pepper them and cook another couple of minutes or until they start to break down.
Add in spinach and cook until softened.
Add in chicken breast, pasta and pesto and stir until combined and pasta is coated with sauce.
Add 1 Tbsp to top of each serving of pasta.
Enjoy!
