SKINNY No-Bake Caramel Apple Icebox Cake🍎🍏

This easy no-bake dessert has layers of sweet caramel sauce, apple pie filling, graham crackers, and a spiced, tangy/sweet cream cheese whip. It is packed with the flavors and spices of Fall and you would never guess it is a lightened up recipe!

How to Make This:

Ingredients:

  • 2 cups Fage Total 0% Nonfat Greek yogurt plain

  • 8 oz Light cream cheese

  • 1 tsp Vanilla extract

  • 8 oz Fat free whipped topping

  • 9 full sheets Honey Maid Cinnamon grahams(139.5 g)

  • 1/4 cup Smucker's Sugar free caramel sundae syrup

  • 1/3 cup Lakanto Monkfruit sweetener with erythritol, golden

  • 1 tsp Fresh lemon juice

  • 1 tsp Apple pie spice (plus more to sprinkle on top) (Homemade Apple Spice Recipe)

  • 1/4 tsp Table salt 2 cups of my no sugar added apple pie filling Homemade Apple Pie Filling

Instructions:

  1. In a mixer, beat the yogurt, cream cheese, and lakanto until fluffy, about 3 minutes.

  2. Add in the lemon juice, vanilla, apple pie spice and salt and mix until combined.

  3. Gently fold in the whipped topping.

  4. In a 9 X9 baking dish, place a single layer of graham crackers (about 4.5 sheets) in the bottom. Breaking them as needed to fit and cover the bottom.

  5. Spread ½ of the caramel sauce evenly over the graham crackers.

  6. Dollop 1/3 of the cream cheese filling over the caramel and spread into an even layer.

  7. Spoon 1/2 of the apple pie filling (about 1 cup) over the filling and spread into an even layer.

  8. Repeat with another layer of graham crackers, remaining caramel sauce, ½ remaining cream cheese filling, and remaining apple pie filling.

  9. Top with remaining cream cheese mixture and sprinkle with apple pie spice.

  10. Cover with plastic wrap and refrigerate for at least 6 hours or overnight until the graham crackers have softened and become cakelike.

  11. Enjoy!
