SKINNY Pumpkin Spice Coffee Cake🎃☕🎂
This healthier, skinny version of pumpkin spice coffee cake is lower in calories and points but still full of delicious Fall flavors. It is a moist pumpkin cake paired with a sweet buttery streusel making it a perfect fall treat!
How to Make This:
Ingredients:
For the streusel:
¼ cup lakanto monkfruit golden(or calorie free sweetener of choice)
¼ cup lakanto monkfruit classic(or calorie free sweetener of choice)
1/4 cup all-purpose flour
1/4 cup pecans, chopped
1 teaspoon pumpkin pie spice -(Homemade pumpkin Spice Recipe)
3 tablespoons melted brummel and brown (light butter spread)
For the cake:
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tsp pumpkin pie spice
1/2 cup monkfruit golden(or calorie free sweetener of choice)
¼ cup monkfruit classic(or calorie free sweetener of choice)
1 cup pumpkin puree
½ cup unsweetened applesauce
4 Tbsp brummel and brown (light butter spread)
½ cup greek yogurt
2 large eggs, beaten
Cooking spray
Instructions:
Preheat oven to 350° F
In a small bowl, add all of the streusel ingredients in and use a fork to mix until crumbly.
In a medium bowl, add in the flour, baking powder, baking soda, salt, 1 tsp pumpkin pie spice.
In a large bowl, add in the pumpkin puree, 4 Tbsp melted butter spread, Greek yogurt, applesauce, eggs, ½ cup lakanto golden, and ¼ cup lakanto classic.
Mix well until incorporated.
Add the dry ingredients into the pumpkin mixture and stir until just combined.
Spray the bottom of 8X8 baking pan with nonstick cooking spray.
Spoon half of the batter into the prepared pan.
Sprinkle with half of the streusel.
Spread the remaining batter over the streusel.
Sprinkle with the remaining streusel.
Bake in preheated oven at 350°F for 40-50 minutes, or until a toothpick inserted in the center comes out clean. Baking times will vary depending on bakeware, oven, elevation, etc.
Cool for 15 minutes before cutting.
