COPYCAT STARBUCKS Pumpkin Bread Lightened Up
This healthier, skinny version of copycat Starbucks pumpkin bread is an easy, and delicious moist pumpkin bread. It has all the flavors of Fall and is topped with pumpkin seeds like the Starbucks version, but is lower in calories and points!
How to Make This:
Ingredients:
1 3/4 cup All-purpose flour
1 tsp Baking soda
1/2 tsp Baking powder
2 tsp Ground cinnamon
2 tsp Pumpkin pie spice (Homemade pumpkin Spice Recipe)
1/2 tsp salt
1/2 cup Unsweetened applesauce
1 Tbsp Coconut oil
1/2 cup Lakanto Classic Monkfruit
1/4 cup Lakanto Monkfruit golden
3 large Eggs
15 oz Canned pumpkin puree
2 tsp Vanilla extract
1/4 cup raw pumpkin seeds (pepitas)
Cooking spray
Instructions:
Preheat the oven to 350 F (170 C).
In a medium bowl, add the flour, baking soda, baking powder, cinnamon, pumpkin spice and salt.
Mix together until well combined.
In a large bowl, add eggs, pumpkin, applesauce, sweeteners, vanilla, and coconut oil, and whisk until well combined.
Pour the dry ingredients into the wet and stir until just combined and dry ingredients are no longer visible.
Spray a 9 x 5 loaf pan with cooking spray and line with parchment paper, letting it overhang on the sides.
Spray parchment with cooking spray and pour the batter into the loaf pan.
Top the with the pumpkin seeds.
Bake at 350F for 55 - 70 minutes or or until a toothpick inserted into the center of the loaf comes out mostly clean, with a few moist crumbs. Baking times will vary depending on oven, elevation, etc. If the top of the bread is browning too quickly, tent with foil to prevent from overbrowning. (I didn't need to do this but every oven is different.)
Let the bread cool in the loaf pan for 15 minutes.
Use the parchment paper overhang to lift the bread out of the pan.
Place bread on cooling rack and allow it to cool before slicing. This will produce the cleanest slices.
Store leftovers in an airtight container in the fridge.
