Southwest Chicken Salad

A Southwest twist on chicken salad!

How to Make This:

Ingredients:

  • 1 cup Plain fat free Greek yogurt

  • 1 Tbsp Taco seasoning mix

  • 1 tsp Granulated garlic

  • 1⁄4 tsp Ground cumin

  • 1⁄4 tsp ground black pepper- salt and pepper to taste. I didn't use salt, just pepper.

  • 16 oz Cooked skinless boneless chicken breast, chopped

  • 15 1⁄2 oz Del Monte Corn, Whole Kernel, Golden Sweet, No Salt Added

  • 15 1⁄2 oz Canned black beans

  • 1 cup Uncooked bell pepper, chopped

  • 1 medium bunch Uncooked scallions, chopped

Instructions:

  1. In a medium bowl, make the dressing by mixing together yogurt, taco seasoning, granulated garlic, cumin and salt and pepper. In a large bowl, add remaining ingredients.

  2. Pour on dressing and mix all together.

  3. Enjoy!
