Southwest Chicken Salad
A Southwest twist on chicken salad!
How to Make This:
Ingredients:
1 cup Plain fat free Greek yogurt
1 Tbsp Taco seasoning mix
1 tsp Granulated garlic
1⁄4 tsp Ground cumin
1⁄4 tsp ground black pepper- salt and pepper to taste. I didn't use salt, just pepper.
16 oz Cooked skinless boneless chicken breast, chopped
15 1⁄2 oz Del Monte Corn, Whole Kernel, Golden Sweet, No Salt Added
15 1⁄2 oz Canned black beans
1 cup Uncooked bell pepper, chopped
1 medium bunch Uncooked scallions, chopped
Instructions:
In a medium bowl, make the dressing by mixing together yogurt, taco seasoning, granulated garlic, cumin and salt and pepper. In a large bowl, add remaining ingredients.
Pour on dressing and mix all together.
Enjoy!
