Easy Broccoli Salad

Perfect Make-Ahead Summer Salad! This delicious, quick and easy broccoli salad is best made ahead and makes a great side for any summer get together! The crisp broccoli, sweet dried cranberries, salty sunflower seeds, and bacon bits, tossed with the tangy, sweet, creamy, homemade dressing, makes for a great combination!

How to Make This:

Ingredients:

  • 8 cups Uncooked broccoli, chopped (the smaller the better!!)

  • 1⁄2 cup Uncooked red onion, chopped

  • 1⁄2 cup Uncooked bell pepper

  • 8 Tbsp (1/2 cup) Kroger Hickory smoke flavor real bacon bits

  • 1⁄2 cup Kroger 50% Less sugar dried cranberries

  • 1⁄4 cup Sunflower seeds

  • 1⁄3 cup Dukes Light mayonnaise

  • 2⁄3 cup Plain fat free Greek yogurt

  • 3 Tbsp Apple cider vinegar

  • 2 Tbsp Lakanto Monkfruit sweetener with erythritol, classic

  • salt and pepper to taste

Instructions:

  1. Whisk together cider vinegar, sweetener, mayonnaise, Greek yogurt, salt and pepper in a medium bowl. Set aside.

  2. In a large bowl, combine broccoli, onion, peppers, cranberries, sunflower seeds, and bacon bits.

  3. Pour the prepared dressing over and mix well.

  4. Refrigerate for at least one hour before serving. This tastes best when it is made a day ahead of time!

  5. Enjoy!
