Skinny Sweet Potato Casserole
I lightened up my favorite sweet potato casserole recipe that I make for Thanksgiving dinner every year. The sweet and creamy sweet potatoes pair perfectly with the buttery brown sugar and pecan crumble topping, making this classic Thanksgiving side dish the perfect lightened up side that everyone will enjoy and you don't have to feel guilty about eating!
How to Make This:
Ingredients:
3 pounds, about 4 large Uncooked sweet potato
2 large Eggs
1⁄2 cup Lakanto Classic Monkfruit Sweetener With Erythritol
1⁄4 cup Lakanto Maple flavored syrup
1 tsp Vanilla extract
1⁄2 tsp Table salt
1⁄2 cup Plain unsweetened almond milk
1 tsp Ground cinnamon
1⁄8 tsp Ground allspice
1⁄8 tsp Ground nutmeg
1⁄2 cup Lakanto Monkfruit sweetener with erythritol, golden
1⁄2 cup All-purpose flour
1⁄2 cup Chopped pecans
7 Tbsp Land O Lakes Light butter spread with canola oil- 3 Tbsp for yams- 4, melted, for crumble topping
Instructions:
Wash, peel and cut sweet potatoes into small pieces.
Add them to a large pot of water and bring to a boil.
Boil for about 5-8 minutes or until they are fork tender.
Drain and add to a large bowl.
Mash potatoes with a potato masher or hand mixer until well mashed.
Let cool about 5 minutes before adding remaining ingredients.
Once they have cooled slightly, add granulated sugar substitute, melted light butter, unsweetened almond milk or skim milk, eggs, vanilla, and 1/2 tsp salt into mashed sweet potatoes. Stir until well combined.
Spray a 9×13 baking dish with non stick cooking spray.
Pour sweet potato mixture into prepared baking dish.
To make the topping, in a small bowl, add brown sugar substitute, flour, pecans and 4 Tbsp melted light butter.
Stir together until crumbly.
Sprinkle the topping evenly over the top of the sweet potato mixture.
Bake in preheated oven at 350F, uncovered, for 35 to 40 minutes, or until set in the middle and topping is slightly browned.
