Skinny Deviled Egg Pasta Salad🥚

This lightened up deviled egg pasta salads is a perfect side salad for any BBQ or summer get together. It is so good no one will know it is a skinny version!

How to Make This:

Ingredients:

  • 8 oz. macaroni pasta

  • 6 large hard boiled eggs

  • 1/2 cup plain greek yogurt

  • 1/4 cup light mayonnaise

  • 2 Tbsp Yellow mustard(or Dijon)

  • 3 Tbsp sweet relish

  • 2-3 Tablespoons pickle juice(or apple cider vinegar)

  • 1⁄2- 1 tsp Hot sauce, optional- to taste

  • ½-1 teaspoon paprika (more for garnish, optional)

  • ½-1 tsp salt (to taste)

  • ¼ tsp pepper (to taste)

  • ½-1 teaspoon granulated garlic (to taste)

  • 1 tsp Lakanto classic

  • 1/2 cup onion, chopped

  • 4 stalks celery, chopped (about ¾ cup)

  • 1/2 cup green onions, chopped(more for garnish, optional)

Instructions:

  1. Cook macaroni in boiling water for 8-10 minutes (or per package instructions).

  2. Drain and rinse with cold water and set aside.

  3. Cut the hard boiled eggs in half and remove the yolks.

  4. Chop egg whites and set aside.

  5. Add the yolks to a large bowl.

  6. Add in pickle juice and mash together with egg yolks.

  7. Add in greek yogurt, mayonnaise, mustard, relish, hot sauce, paprika, garlic, salt and pepper, Lakanto and stir until combined.

  8. Add the onion, celery, green onions, egg whites to the egg yolk mixture, and stir until combined.

  9. Fold in cooked and cooled pasta.

  10. Garnish with more chopped green onions and paprika if desired.

  11. You can eat it right away but it tastes best if refrigerated for a couple of hours first. Overnight is even better!

  12. Enjoy!
