Skinny Chicken Pasta Salad With Artichokes

This high protein, delicious and easy, lightened up cold chicken pasta salad is full of bright colors and flavors!

How to Make This:

Ingredients:

  • 1 1⁄2 pounds Cooked skinless boneless chicken breast(s)

  • 3⁄4 cup Fat-free Italian salad dressing

  • 1⁄2 cup Uncooked red onion, chopped

  • 1 medium Uncooked bell pepper, chopped

  • 1 cup Grape tomatoes

  • 2 3⁄4 oz Sliced black ripe olives

  • 1⁄2 cup, or 2 oz Mozzarella part skim finely shredded cheese

  • 8 oz Whole grain rotini, uncooked

  • 12 oz Reese's Artichoke Hearts, Quartered, drained

  • 1/4 cup Uncooked scallions (green onions)

Instructions:

  1. Cook pasta until al dente.

  2. Drain and rinse with cold water.

  3. In a large bowl, add remaining ingredients and mix together.

  4. Fold in cooked pasta.

  5. Enjoy!
