Skinny Chicken Pasta Salad With Artichokes
This high protein, delicious and easy, lightened up cold chicken pasta salad is full of bright colors and flavors!
How to Make This:
Ingredients:
1 1⁄2 pounds Cooked skinless boneless chicken breast(s)
3⁄4 cup Fat-free Italian salad dressing
1⁄2 cup Uncooked red onion, chopped
1 medium Uncooked bell pepper, chopped
1 cup Grape tomatoes
2 3⁄4 oz Sliced black ripe olives
1⁄2 cup, or 2 oz Mozzarella part skim finely shredded cheese
8 oz Whole grain rotini, uncooked
12 oz Reese's Artichoke Hearts, Quartered, drained
1/4 cup Uncooked scallions (green onions)
Instructions:
Cook pasta until al dente.
Drain and rinse with cold water.
In a large bowl, add remaining ingredients and mix together.
Fold in cooked pasta.
Enjoy!
