Easy Pioneer Woman's DEVILED EGGS🥚 Lightened Up

I saw a recipe for Pioneer Woman's deviled eggs and wanted to lighten it up and make it more WW friendly! They were delicious!

How to Make This:

Ingredients:

  • 12 large Eggs

  • 1⁄4 cup Light mayonnaise ( I used Hellmann's)

  • 1⁄4 cup Plain fat free Greek yogurt

  • 2 Tbsp French's Classic yellow mustard

  • 2 tsp Pickle juice(I used dill pickle juice)

  • 1⁄4 tsp Hot sauce, optional- to taste

  • 1⁄4 tsp Table salt

  • 1⁄4 tsp Black pepper

  • 1⁄4 tsp Paprika, for sprinkling on top

Instructions:

  1. Boil your eggs. I do mine by adding eggs to a large pot, covering them with water (2-3 inches over eggs), and bringing them to a boil.

  2. Once boiling, remove from heat, cover and let sit for 15 minutes.

  3. Drain and rinse with cold water.

  4. Make an ice bath with ice and cold water and let the eggs sit for 5 minutes before peeling.

  5. Peel the eggs and cut them in half, lengthwise.

  6. Remove the yolks from the egg halves and put them into a bowl.

  7. Mash the yolks well with a fork.

  8. Add the mayonnaise, yogurt, mustard, pickle juice, salt, pepper, and a few drops of hot sauce, if desired.

  9. Stir well until mixture is mostly smooth.

  10. Add the mixture to a pipping bag or zip-lock plastic bag and snip ¼-inch off of one of the bottom corners.

  11. Pipe the mixture into the egg white halves.

  12. Sprinkle the eggs with paprika.

  13. Enjoy!
