Lightened Up Cornbread Muffins

These light and fluffy corn bread muffins are so easy to make and low enough in points you can have more than one!

How to Make This:

Ingredients:

  • 1 cup self rising flour

  • 1 cup corn meal

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 Tbsp Sugar( you could also use a no calorie sweetener Lakanto Classic Monk Fruit Sweetener)

  • 1 cup non fat plain Greek yogurt

  • 1 cup almond milk, unsweetened vanilla

  • 1/4 cup unsweetened applesauce

  • 2 lg eggs

Instructions:

  1. In a medium bowl, mix together flour, cornmeal, salt and baking soda.

  2. In another bowl, mix together remaining ingredients.

  3. Whisk or stir together well.

  4. Slowly stir dry ingredients into wet until combined.

  5. Prepare muffin pan, I used silicone baking cups but you can also use cooking spray.

  6. Evenly fill 16 cups and bake at 375 for about 20-25 minutes.

  7. Let cool.

  8. Enjoy!
