Lightened Up Cheesy Broccoli Puff πŸ§€πŸ₯¦

This Easy cheesy broccoli puff is a lightened up version of an old school recipe. It is cheesy, delicious, kid friendly and makes a great side or main!

How to Make This:

Ingredients:

  • 20 oz Frozen chopped broccoli or fresh

  • 10 oz Campbell's Condensed Soup 98% Fat free cream of mushroom

  • 2 large Eggs

  • 1⁄2 cup Plain fat free Greek yogurt

  • 2 Tbsp Onion, chopped

  • 1⁄2 tsp salt

  • 1⁄4 tsp Black pepper

  • 5 oz, 0r 1 1/4 cups Kroger Reduced fat finely shredded sharp cheddar cheese

  • 4 oz (about 1 cup, crushed) Ritz Cheddar Flavor Cheese Crispers

  • 2 Tbsp Brummel & Brown Spread Made with Yogurt calorie free cooking spray for pan

Instructions:

  1. Steam broccoli until tender, drain and set aside.

  2. In a large bowl, add and stir remaining ingredients together minus the crackers and butter.

  3. Stir broccoli in and pour into a prepared 9X9 casserole dish.

  4. Top with crushed crackers and pour melted butter butter spread evenly over them.

  5. Bake at 350F, uncovered, for about 40 minutes.

  6. Enjoy!
