Lightened Up Cheesy Broccoli Puff 🧀🥦
This Easy cheesy broccoli puff is a lightened up version of an old school recipe. It is cheesy, delicious, kid friendly and makes a great side or main!
How to Make This:
Ingredients:
20 oz Frozen chopped broccoli or fresh
10 oz Campbell's Condensed Soup 98% Fat free cream of mushroom
2 large Eggs
1⁄2 cup Plain fat free Greek yogurt
2 Tbsp Onion, chopped
1⁄2 tsp salt
1⁄4 tsp Black pepper
5 oz, 0r 1 1/4 cups Kroger Reduced fat finely shredded sharp cheddar cheese
4 oz (about 1 cup, crushed) Ritz Cheddar Flavor Cheese Crispers
2 Tbsp Brummel & Brown Spread Made with Yogurt calorie free cooking spray for pan
Instructions:
Steam broccoli until tender, drain and set aside.
In a large bowl, add and stir remaining ingredients together minus the crackers and butter.
Stir broccoli in and pour into a prepared 9X9 casserole dish.
Top with crushed crackers and pour melted butter butter spread evenly over them.
Bake at 350F, uncovered, for about 40 minutes.
