EASY Cowboy Caviar Recipe🫑🌽🧅 Lightened up
This Cowboy Caviar recipe makes a fresh, and colorful dip, salad or side dish for any picnic, potluck, or party. It is a great way to use up your summer produce and can be thrown together in minutes!
How to Make This:
Ingredients:
15 1⁄2 oz Canned black beans, rinsed and drained
15 1⁄2 oz Canned pinto beans, rinsed and drained
15 1⁄2 oz Canned corn, drained
2 medium Red bell pepper, chopped(I typically only use 1 and add 1 cup chopped tomatoes)
1 medium Red onion, chopped
1 medium Jalapeño pepper, diced
1 1⁄2 cup Cilantro, chopped
4 Tbsp Olive oil
2 Tbsp Apple cider vinegar
1 Lime, juiced
1 Tbsp Monk fruit sweetener with erythritol (or no calorie sweetener of your choice)
1⁄2 tsp Table salt
1 tsp Ground cumin
1 tsp Chili powder
1⁄2 tsp Granulated garlic
1⁄4 tsp Black pepper
Instructions:
In a large bowl, whisk together the olive oil, sweetener, lime juice, apple cider vinegar, garlic, cumin, chili powder, salt and pepper.
Add in remaining ingredients and stir together.
You can eat it right away or refrigerate for a couple of hours before serving.
