Easy Cheesy Zucchini Breadsticks
These cheesy breadsticks use zucchini in the crust, making them a low carb, healthier alternative to traditional cheesy breadsticks. They still pack a ton of flavor and hit the spot when you want cheesy breadsticks but don't want all the calories, carbs and points! Dip them in a low point/calorie marinara sauce for a delicious, easy appetizer!
How to Make This:
Ingredients:
1 pound Uncooked zucchini, shredded
1 large Egg
1 1⁄2 cup Part skim mozzarella cheese shredded - 1/2 cup for breadsticks, 1 cup for topping
1⁄2 cup Shredded parmesan cheese
1⁄2 tsp Garlic salt
3⁄4 tsp Italian seasoning - 1/2 tsp for breadsticks, 1/4 for topping
Instructions:
Grate zucchini. Squeeze out as much liquid as possible by placing it into a kitchen towel and squeezing. The more liquid removed, the more breadlike your sticks will be.
In a bowl, combine the grated zucchini, 1/2 cup mozzarella cheese, parmesan cheese, egg, garlic salt and Italian seasoning. Stir well to combine.
Spray a 9X13 baking sheet with cooking spray, line with parchment paper, and spray the parchment paper with cooking spray.
Spread out the zucchini mixture. It will be thin. Pat down.
Bake at 425F for 20-25 minutes.
Top baked crust with remaining cup mozzarella cheese.
Bake again at 425F second time for 5-8 minutes, until the cheese melts and gets golden brown.
Serve with marinara homemade marinara
