Skinny Potato Salad Recipe

This Weight Watchers Potato Salad is a lightened up version of a traditional potato salad. It packs a ton of flavor but not a lot of calories!

How to Make This:

Ingredients:

  • 2 pounds, peeled and cut potatoes

  • 4 stalks celery, chopped

  • 1/2 small onion, chopped

  • 1/3 bunch green onion, chopped

  • 2 boiled eggs

  • 1/2 cup Fat free plain greek yogurt

  • 1/4 cup fat free mayonnaise

  • 2 tsp apple cider vinegar

  • 1 1/2 tsp no calorie sweetener. I used stevia

  • 3 Tbsp sweet relish

  • 1-2 Tbsp mustard

  • garlic powder, salt and pepper to taste

  • I also like to add a couple Tbsp of pickle juice

Instructions:

  1. First you want to boil your potatoes until they start to get tender.

  2. While you potatoes are boiling, mash one egg yolk together with the apple cider vinegar in a medium size bowl.

  3. Add all remaining ingredients besides the potatoes and eggs and stir well.

  4. Once the potatoes are fork tender, drain and add to sauce mixture, stirring until potatoes are evenly covered.

  5. Chop up remaining egg and fold into potato mixture.

  6. Sprinkle with paprika if desired.

  7. Let the potato salad cool completely in the refrigerator before serving. I like to let mine set over night.

  8. Enjoy!
