Cheesy Corn Dog Muffins
I used my corn bread muffin recipe as a base and added to it to come up with these fun cheesy corn dog muffins. They are quick and easy to make and turned out great in the air fryer! They are low in points and kid friendly!
How to Make This:
Ingredients:
1 cup Plain fat free Greek yogurt
1 cup Unsweetened vanilla almond milk
2 Tbsp Sugar(or no calorie sweetener)
2, large Eggs
1/4 cup Unsweetened applesauce
1 cup White self-rising flour
1 cup Yellow cornmeal
1/2 tsp Baking soda
1/2 tsp salt
6 hotdogs, cut in thirds (I used Ball Park Franks, Smoked White Turkey)
1 cup Great Value Finely shredded reduced fat fiesta blend cheese Pickled jalapeno peppers (optional)
Instructions:
In a medium bowl, mix together flour, cornmeal, baking soda and salt.
In another medium bowl, mix together yogurt, almond milk, sugar, eggs, applesauce and cheese.
Slowly stir dry ingredients into wet, until combined.
Fill muffin cups roughly 2/3 full, I used silicone baking cups.
Cut 6 hot dogs into thirds and place a third of a hotdog down into the middle of the batter.
Add jalapenos if desired.
If using an airy fryer, cook at 325 for 8-10 minutes.
For the oven, bake at 375 for about 20-25 minutes.
