Avocado Bacon Pasta Salad
This avocado bacon pasta salad is a lightened up WW friendly pasta salad that is perfect for summer BBQ's potlucks and more!
How to Make This:
Ingredients:
3 cups uncooked pasta (8 oz)
5 oz avocado
56 grams cooked bacon, crumbled
1/2 cup non fat plain greek yogurt
1/2 cup light mayonaise
1/2 medium red onion, chopped
1/2 red bell pepper, chopped
1/2 bunch green onion, chopped
1-2 tsp apple cider vinegar
1 - 1 1/2 tps no calorie sweetener
1-2 Tbsp dijon mustard
1-1/2 tsp granulated garlic
salt and pepper to taste
Instructions:
Cook pasta until tender and set aside.
In a large bowl, mash up avocado, and mix together with apple cider vinegar, mayo and yogurt.
Add no calorie sweetener, mustard and salt and pepper to taste.
Stir in veggies and bacon and lastly pasta.
This tastes best if allowed to sit in the fridge for several hours or overnight!
