Mexican Pizza
Easy Mexican pizza perfect for a quick lunch or dinner!
How to Make This:
Ingredients:
4 corn tortillas
1/2 lb ground chicken, raw
1/2 cup fat free refried beans
1 tsp minced garlic
1 tsp taco seasoning
1/3 cup salsa
1/2 cup chopped cilantro
1/4 cup low fat cheese
Instructions:
Bake tortillas about 5-7 minutes at 425.
Cook chicken in a small pan, adding a tsp of taco seasoning and 1 tsp minced garlic.
In a bowl, mix together beans, salsa and cilantro.
Spread bean mixture on tortillas, top with chicken and then cheese.
Bake until cheese is melted.
Top as desired.
Enjoy!
