Mexican Pizza

Easy Mexican pizza perfect for a quick lunch or dinner!

How to Make This:

Ingredients:

  • 4 corn tortillas

  • 1/2 lb ground chicken, raw

  • 1/2 cup fat free refried beans

  • 1 tsp minced garlic

  • 1 tsp taco seasoning

  • 1/3 cup salsa

  • 1/2 cup chopped cilantro

  • 1/4 cup low fat cheese

Instructions:

  1. Bake tortillas about 5-7 minutes at 425.

  2. Cook chicken in a small pan, adding a tsp of taco seasoning and 1 tsp minced garlic.

  3. In a bowl, mix together beans, salsa and cilantro.

  4. Spread bean mixture on tortillas, top with chicken and then cheese.

  5. Bake until cheese is melted.

  6. Top as desired.

  7. Enjoy!
