Cranberry Pecan Chicken Salad

This delicious and easy, lightened up cranberry pecan salad is full of flavor but not calories! It is sweet, savory, and packed with protein that will keep you full!

How to Make This:

Ingredients:

  • 3⁄4 cup Member's Mark Nonfat plain Greek yogurt or fat free sour cream

  • 1⁄4 cup Hellmann's Light mayonnaise

  • 1 tsp Dijon Mustard

  • 1⁄2 tsp Granulated garlic

  • 1⁄2 tsp or to taste Table salt

  • 1⁄4 tsp McCormick Organic Coarse Ground Black Pepper

  • 4 cups Cooked skinless boneless chicken breast, chopped

  • 1 small Fresh apple, chopped

  • 2 medium ribs Uncooked celery

  • 1⁄4 cup Uncooked red onion, chopped

  • 1⁄2 cup Kroger 50% Less sugar dried cranberries

  • 1⁄2 cup Chopped pecans

Instructions:

  1. In a small bowl, whisk together the Greek yogurt (or sour cream), mayonnaise, mustard, granulated garlic, salt and pepper.

  2. Add the chicken, celery, red onion, apple and cranberries and pecans and fold in until well combined.

  3. For best flavor, refrigerate for at least an hour.

  4. Enjoy!
