Copycat KFC Famous Bowls-Lightened up! Healthier, Lower Carb, Homemade KFC Bowl!
This healthier, lower carb copycat of the KFC famous bowl is so delicious at a fraction of the calories and WW points! They also come together really quickly for an easy and delicious WW friendly lunch!
How to Make This:
Ingredients:
32 oz Frozen Cauliflower Rice
4 Tbsp (56g) Light Butter, I used Brummel and Brown
1/2 tsp Black Pepper
1 can Whole Kernel Corn, drained
1 cup Heinz Brown Gravy, from a jar(I factored in the whole jar in recipe builder)
1/2 C (56g) Reduced Fat Shredded sharp Cheddar
12 oz Realgood lightly breaded chicken strips
Instructions:
Microwave your cauliflower rice according to package.
Drain any remaining liquid before adding to a food processor or blender.
Add in the butter spread and black pepper, and blend until smooth.
Cook chicken strips in air fryer. Mine took about 10 minutes on the chicken setting.
Drain can of corn and microwave for about a minute or until warm.
Microwave the beef gravy for about 2 minutes or until warm.
Divide the mashed cauliflower between bowls.
Add the corn, dividing equally between the bowls (a little less than 1/2 cup each).
Divide and pour gravy over the corn(I used about 1/4 cup on each).
Divide and add the chicken on top (about 3 oz each).
Divide and sprinkle the shredded cheddar evenly on top. and repeat for the second bowl.
Enjoy!
