Copycat Chipotle Chicken Burrito Bowls🌯

How to Make This:

Ingredients:

  • 🍗Ingredients for the chicken:

  • 2 1⁄2 pounds Uncooked boneless skinless chicken breast

  • 1 tsp Ground cumin

  • 4 tsp Jarred minced garlic

  • 1 tsp Dried oregano

  • 1 tsp Kosher salt

  • 1 tsp Black pepper

  • 1 Tbsp Chili powder

  • 1 Tbsp Olive oil

  • 4 Canned chipotle peppers in adobo sauce

  • 3 Tbsp Adobo sauce, about half the sauce in a 12 oz can of chipotle peppers

  • 3⁄4 cups Water

  • 🧅🫑Fajita Veggies Ingredients:

  • 1 large Red onion, sliced

  • 2 large Green bell peppers, sliced

  • 1 Tbsp Olive oil

  • 1 tsp Dried oregano

Instructions:

  1. For the chicken:

  2. Add all ingredients to a blender (I use a nutribullet) and blend 30 seconds or more until all ingredients are pureed.

  3. Add chicken to a ziplock bag and pour marinade over, making sure all of the chicken gets covered.

  4. Let sit in refrigerator for 12-24 hours before cooking.

  5. Cook chicken on the grill or bake until it reaches an internal temp of 165 F.

  6. Let rest for about 10 minutes then cut into pieces.

  7. For the Veggies:

  8. Heat the oil in a large pan on medium-high heat.

  9. Add the sliced bell peppers and onion, and saute for 7-10 minutes, or until the veggies have softened and are starting to caramelize.

    -Assemble bowls with whatever you want. I used steak, fajita veggies, beans and corn, and Copycat Chipotle Cilantro Lime Riced Cauliflower. I toped them with fat free Greek yogurt, Copycat Chipotle Guacamole and Copycat Chipotle Pico de Gallo!

  10. Enjoy!
