White Chicken Enchiladas
I saw this delicious recipe for white chicken enchiladas, and had to try it out! It is made with flour tortillas, shredded chicken, cheese, green chiles and a delicious creamy white sauce! It is super easy to make and one the whole family will love!
How to Make This:
Ingredients:
16oz Cooked skinless boneless chicken breast
10 oz low fat cream of chicken soup
1 cup Plain fat free Greek yogurt
2/3 cup Fat free skim milk 12 tortillas, I used Pueblo Lindo White corn tortillas
2 cups low fat finely shredded cheese, I used Kroger Reduced fat 4 cheese Mexican blend
4 oz can of green chilis
1 tsp granulated garlic
1 Tbsp dried minced onion
Salt and pepper to taste
Instructions:
In a large bowl, for the sauce, combine all ingredients except for chicken, cheese and tortillas. S
pray a 13X9 casserole dish with cooking spray and lay down 6 tortillas.
Add 1/2 of the chicken to the top and cover with half the sauce and half the cheese.
Repeat.
Bake uncovered at 350 for about 30 minutes.
