White Chicken Enchiladas

I saw this delicious recipe for white chicken enchiladas, and had to try it out! It is made with flour tortillas, shredded chicken, cheese, green chiles and a delicious creamy white sauce! It is super easy to make and one the whole family will love!

How to Make This:

Ingredients:

  • 16oz Cooked skinless boneless chicken breast

  • 10 oz low fat cream of chicken soup

  • 1 cup Plain fat free Greek yogurt

  • 2/3 cup Fat free skim milk 12 tortillas, I used Pueblo Lindo White corn tortillas

  • 2 cups low fat finely shredded cheese, I used Kroger Reduced fat 4 cheese Mexican blend

  • 4 oz can of green chilis

  • 1 tsp granulated garlic

  • 1 Tbsp dried minced onion

  • Salt and pepper to taste

Instructions:

  1. In a large bowl, for the sauce, combine all ingredients except for chicken, cheese and tortillas. S

  2. pray a 13X9 casserole dish with cooking spray and lay down 6 tortillas.

  3. Add 1/2 of the chicken to the top and cover with half the sauce and half the cheese.

  4. Repeat.

  5. Bake uncovered at 350 for about 30 minutes.

  6. Enjoy!
