Turkey lasagna
How to Make This:
Ingredients:
1 Lb lean ground turkey
3 cups marinara sauce
8 oz or 12 lasagna noodles
16 oz part skim ricotta cheese
1 1/2 cups part skim mozzarella cheese
1 Lb fresh spinach
8 oz sliced mushrooms
1 medium onion, chopped
1 bell pepper, chopped
1 Tbsp minced garlic
1 Tbsp olive oil
salt and pepper to taste
Instructions:
In a large pan on medium heat, add in oil and let heat.
Add in ground turkey and fresh ground pepper.
Let it cook until browned.
Once the turkey is browned, remove it from pan.
In the same pan, add in onion and bell pepper and let cook until softened.
Add in mushrooms and garlic and let cook until mushrooms have softened.
Add in spinach, adding about 1/2 first to let it get cooked down before adding the rest.
Add back in the cooked turkey and stir all together.
Spray a 9X13 casserole dish with cooking spray.
Pour in some of your marinara sauce on the bottom.
Lay a layer of lasagna noodles on the bottom.
Add half of the turkey mixture on top of the noodles.
Dot about half of the ricotta cheese on top.
Add more marinara, followed by the second layer of noodles.
Top with remaining turkey mixture, the rest of the ricotta, more sauce, the final layer of noodles and the remaining sauce.
Top with Mozzarella.
Spray a piece of aluminum foil with cooking spray so that it doesn’t stick.
Cover and Bake at 375 F for about 30 minutes.
Remove, uncover and let bake another 2o minutes, or until noodles soften and cheese has browned a bit.
Let sit about 15 minutes before serving.
