Turkey Sausage and Mushroom Pasta Casserole

This turkey sausage and mushroom pasta casserole is the perfect comfort food when you are craving pasta but want to stay in your WW points. It is filling and delicious and easy to make!

How to Make This:

Ingredients:

  • 13 oz turkey sausage

  • 1 pound sliced mushrooms

  • 12 oz uncooked wheat pasta 24 oz marinara sauce (I use this WW recipe for Homemade Marinara sauce)

  • 1 cup part skim shredded mozzarella

  • 2 Tbsp parmesan cheese

  • 1 red onion, chopped

  • 1 bell pepper, chopped

  • 2 tsp minced garlic

  • 1 tsp oregano

  • 1 tsp olive oil

  • ground pepper to taste

  • no calorie cooking spray

Instructions:

  1. Cook pasta according to instructions on package until al dente.

  2. While pasta is cooking, heat oil in large pan on medium high heat, add sausage, peppers and onions and cook until veggies start to soften.

  3. Add in mushrooms and cook until they soften.

  4. Add in garlic and cook about a minute more.

  5. Add in oregano and ground pepper, stir.

  6. Pour in marinara sauce, stir and turn down heat to low.

  7. Let sauce mixture simmer for a few minutes.

  8. Add cooked pasta to sauce mixture and pour into a 13 X 9 inch pan, sprayed with cooking spray.

  9. Top with Mozzarella and parmesan cheese.

  10. Bake at 350 for 25-30 minutes or until cheese is melted.

  11. Enjoy!
