Turkey and Spinach Lasagna Rolls
These lasagna rolls are a fun twist on traditional lasagna that take less time to make! They taste delicious and provide easy portion control.
How to Make This:
Ingredients:
Uncooked lasagna noodles (6)
1/2 pound lean turkey breast (93% fat free)
1 medium onion, chopped
1 medium bell pepper, chopped
16 oz marinara sauce (I used a 24 oz jar which can affect the overall points, I now use this marinara which is lower in points Homemade Marinara Sauce
1/3 cup water
1 cup part skim ricotta cheese
5 oz frozen spinach, thawed and squeezed dry (I used 9 oz)
1/2 cup shredded part skim mozzarella cheese
2 Tbsp parmesan cheese
1 egg, beaten
1 tsp olive oil
1/8 tsp nutmeg
ground pepper to taste
Instructions:
Cook lasagna noodles according to package.
Drain, rinse and lay on wax paper.
Heat oil in large pan on medium-high heat.
Cook turkey, onion and bell pepper until turkey browns and veggies soften, about 8-10 minutes.
Add in marinara sauce and water, stir and let mixture come to a boil.
Once it comes to a boil, reduce heat and let simmer for 10 minutes or so while you prepare the noodles.
Combine ricotta, parmesan, egg, spinach and nutmeg together.
Spread 1/6 of mixture on each noodle. Roll noodles.
Pour half of turkey mixture on bottom of a 8X8 pan and lay rolled noodles in sauce then cover with remaining sauce.
Cover with foil and bake at 375 for 30 minutes.
Sprinkle with mozzarella cheese and return to oven, uncovered, and cook an additional 5-10 minutes or until cheese is melted.
