Taco Bubble Up Casserole
This Taco Bubble Up Casserole is not only Weight Watchers friendly, it is easy and delicious and comes together in minutes! The best part is my kids love it too!
How to Make This:
Ingredients:
1 pound lean ground beef 93% ( or 93% lean ground turkey)
2 cups low fat shredded cheese (I used a 40% less fat)
1 can black beans, rinsed and drained
1 can rotel
1 can enchilada sauce (19 oz)
1 red pepper, chopped
1 red onion, chopped
1/2 bunch green onion, chopped
1 can refrigerator biscuits (use 7.5 ounce can to keep the points as listed above) OR one batch of 2 ingredient pizza dough: 1 1/8 cup self rising flour, divided. 1 cup for dough, 1/8 cup for kneading 3/4 cup Nonfat plain Greek yogurt
2/3 cup water
2 Tbsp taco seasoning
2 tsp minced garlic
Instructions:
If using the 2 ingredient dough, stir yogurt and flour in a medium bowl until dough starts to form. knead dough for 3-5 minutes. Roll out and cut into pieces. If using refrigerator biscuits, cut into small pieces. Set aside.
Cook hamburger till brown.
Once it is browned, add taco seasoning and water and let cook until most of the water has evaporated.
Add veggies and garlic and cook a couple of minutes till slightly softened.
Add enchilada sauce, rotel and beans, mix well.
Add half of cheese mix well.
Mix in chopped biscuits or dough.
Stir until dough starts to slightly break apart. Let mixture set for a few minutes to get the dough to start warming through.
Pour mixture in a prepared 13X9 inch pan and cook at 350 for 25-30 minutes.
Add remaining cheese and return to oven for about 5-10 minutes or until cheese is melted.
