Baked Chicken Cordon Bleu
This recipe for Baked Chicken Cordon Bleu is a Weight Watchers friendly recipe. It is easy to make and tastes so good you won't know it is a lightened up version of the traditional dish.
How to Make This:
Ingredients:
4 , four ounce boneless, skinless chicken breasts
4 slices of light swiss cheese
4 slices of prosciutto
1/2 cup bread crumbs
2 egg whites
1 Tbsp water
salt and pepper
Instructions:
Place chicken breasts between wax paper and use a rolling pin to beat chicken until about 1/4 inch thickness.
Lay out chicken breasts flat and salt and pepper them.
Lay Swiss cheese on chicken breast followed by prosciutto.
Roll chicken breast up and place seam down.
Beat water and egg whites together.
Dip chicken in egg whites then dredge chicken in bread crumbs and place on prepared cooking sheet.
Spray chicken with cooking spray and bake at 350 until chicken reaches an internal temp of 165. (about 25-30 minutes)
