Sloppy Joe Bombs
A lightened up, sloppy joe twist on bombs!
How to Make This:
Ingredients:
1 1/4 cups self rising flour (1 cup for dough and the 1/4 cup to knead and roll out dough with)
3/4 cup Fat free Greek yogurt
1/2 cup reduced fat cheddar cheese (I use a 40% less fat cheese)
8 oz lean ground turkey
1/4 cup no sugar added ketchup
1/4 cup no sugar added BBQ sauce
1 Dill pickle spear, chopped
1/2 medium onion chopped finely
1/2 red bell pepper chopped finely
1 tsp Worcestershire sauce
1/2 tsp Dijon mustard
2 tsp brown sugar
1 tsp chili powder
1/2 tsp ground cumin
1 tsp minced garlic
I used cooking spray but recommend using a beaten egg to brush the tops
ground pepper to taste
Instructions:
Cook meat, bell pepper and onion in a medium sized frying pan on med/high heat until meat is browned and pepper and onion is softened.
Salt and pepper to taste.
Reduce heat to medium and add garlic, chili powder and ground cumin and cook another minute.
Add in Worcestershire sauce, mustard, ketchup, BBQ sauce, brown sugar and pickle, stir well.
Reduce heat to low and let mixture continue to cook for a few minutes.
Remove from heat and let cool down.
Mix 1 cup of flour with Greek yogurt until well combined.
Knead dough for about 5 minutes.
Once dough is well kneaded, cut into 8 equal parts and roll out each part into roughly a 5 inch diameter circle.
Put about 3-4 Tbsp of meat mixture in the middle of the dough, followed by 1/2 Tbsp cheese.
Pull sides of dough up and together and pinch to close.
Place seam side down on a baking sheet lined with parchment paper.
I used cooking spray for the tops but recommend brushing the tops of the balls with slightly beaten egg.
Bake at 425 for about 15 minutes.
