Healthy Turkey Stuffed Peppers
This Healthy Stuffed Peppers recipe is a delicious twist on a traditional recipe. I use turkey instead of ground beef and add corn, tomatoes and black beans for a colorful, delicious meal!
How to Make This:
Ingredients:
5 bell peppers
1 pound of ground turkey
1 can of corn, drained.
1 can of diced tomatoes.
1 can black beans, drained.
2 cups cooked rice (I used brown)
1 1/2 cup shredded cheese
1 bunch green onion, chopped
3 tsp minced garlic
1 Tbsp cumin
1 Tbs chili powder
Salt and pepper to taste about
1 Tbsp olive or vegetable oil (to cook turkey)
Instructions:
Wash and cut peppers length wise and remove seeds and membrane.
Place peppers in boiling water for about 5 minutes to slightly soften.
Remove peppers and place on paper towel to dry.
Heat a large pan to med/high heat and add about a Tbs of oil to pan.
Cook turkey until done.
Add garlic and cook about 1 minute more.
Add the spices, corn, tomatoes, black beans, green onion, and rice and stir well.
Add about 1/2 the cheese and mix again.
Place peppers in a prepared 13X9 inch baking dish and fill with mixture.
Bake, uncovered at 350 for 20 minutes.
Remove and top with remaining cheese.
Bake an additional 5 minutes or until cheese is melted.
