SKINNY Thai Chicken Salad π₯π₯π«π₯¬πππwith Homemade Peanut Dressing
This lightened up salad is bursting with flavor from the homemade dressing and fresh ingredients. It is also full of protein! It's great for dinner on it's own, or also makes a great side! However you have it, it is so good no one will know it is a skinny version!
How to Make This:
Ingredients:
Dressing
Β½ cup pbfit powder
5 Tbsp water
ΒΌ cup soy sauce
ΒΌ cup Chicken broth
2 Tbsp lime juice
2 Tbsp Lakanto maple syrup
1 tsp hot sauce
ΒΎ tsp granulated garlic
Β½ tsp sesame oil
Β½ tsp ground ginger
Salad
4 cups shredded chicken (about 1 lb)
6 cups coleslaw
1 red bell Pepper, diced
12 oz canned mandarin oranges in 100% juice, drained and patted dry
Β½ cup green onions
ΒΌ cup cilantro, roughly chopped
Β½ cup honey roasted peanuts
1/3 cup slivered almonds
Instructions:
Add all the dressing ingredients to a food processor/blender (or in a large bowl with a whisk) and blend until well combined and smooth.
Add remaining salad ingredients to a large bowl and toss.
Add the dressing in slowly and toss until salad is coated.
Enjoy!
