Shepherd's Pie SoupπŸ₯§πŸ²πŸ₯”πŸ₯•πŸ«›πŸ§€

This skinny shepherd's pie soup is a hearty, savory soup that combines the flavors of traditional shepherd's pie in a soup!

How to Make This:

Ingredients:

  • 2 Β½ pounds potatoes, peeled and diced- divided

  • 1 pound lean (93%) ground beef (or lamb)

  • 1 medium onion, diced

  • 2 tsp garlic

  • 4 cups chicken broth (or beef broth) divided

  • 1 Tbsp Worcestershire sauce

  • 1 tsp dried rosemary

  • 1 tsp dried thyme

  • 2 bay leaves

  • 2 Tbsp Brummel and brown

  • 1/4 cup Fat Free Greek yogurt

  • 1 cup (4oz) shredded reduced fat sharp cheddar cheese

  • 1 2 oz mixed frozen vegetables

  • salt and pepper to taste

Instructions:

  1. Steam 1 1/2 pounds of the potatoes in a pot until fork tender, about 15-20 minutes.

  2. Meanwhile, in a large saucepan over medium-high heat, add and cook the beef and onions until the beef is cooked through.

  3. Add the garlic to the beef and cook until fragrant, about a minute.

  4. To the cooked beef, add in half of the broth, the remaining 1 lb potatoes, the Worcestershire sauce, rosemary, thyme and bay leaves and bring to a boil.

  5. Reduce the heat to low and let simmer until the potatoes are tender, about 15-20 minutes.

  6. Meanwhile, when the potatoes are steamed, drain them and add to a blender or food processer, along with the Greek yogurt, butter spread and the remaining broth.

  7. Blend until smooth.

  8. Mix it into the soup along with the mixed veggies.

  9. When the diced potatoes in the soup are tender, and veggies are heated through, remove bay leaves.

  10. Add cheddar and let it melt into the soup.

  11. Season with salt and pepper to taste

  12. Enjoy!
