SKINNY Lemon Ricotta Spinach Pasta🍋🧀

This Easy pasta dish uses simple, fresh ingredients. It has a bright and vibrant flavor with the fresh lemon juice and zest. The zesty lemon flavor pairs wonderfully with the creamy ricotta and spinach. It makes a delish weeknight meal ready minutes!

How to Make This:

Ingredients:

• 8 ounces uncooked whole wheat pasta

• 1 Tbsp olive oil

• 3 garlic cloves, minced

• 6 ounces baby spinach

• 1 cup part skim ricotta (248 g) at room temperature

• 1/3 cup grated parmesan cheese (28g)

• Juice and zest from 1 large lemon(about ¼ cup juice and about 1 Tbsp zest)

• 1 cup reserved pasta water

• Salt and pepper to taste

• red pepper flakes (optional)

Instructions:

1. Cook pasta according to package directions.

2. Reserve 1 cup of cooking water and drain pasta.

3. While the pasta is cooking, heat olive oil in a large skillet over medium-low heat.

4. Add garlic and stir for about a minute, until fragrant.

5. Add spinach and cook until wilted, about 5 minutes.

6. Lower the heat to low and add ricotta, parmesan, lemon juice and zest, salt and pepper and stir well.

7. Stir in 1/2 cup of pasta water until smooth.

8. Add pasta and toss the pasta until well-coated. Add more pasta water as needed.

9. Enjoy!
