Skinny Sloppy Joe Cauliflower Rice Bake
This Lightened Up WW friendly Sloppy Joe Bake is really easy to make and comes together in minutes. Its a warm comfort food perfect for Fall.
How to Make This:
Ingredients:
16 oz uncooked Shady Brook Farms 93% lean ground turkey
1 medium Red bell pepper, chopped
1 medium Onion, chopped
1 tsp Spice World Minced Garlic
8 oz Canned tomato sauce
1 1⁄4 oz Sloppy Joe seasoning mix
3 cups cooked Cauliflower Rice (I used 2 10 oz Green Giant Riced Veggies Cauliflower)
1 cup Fat free cottage cheese
1 cup Plain fat free Greek yogurt
1 1⁄2 cups Lucerne Finely shredded Mexican four cheese blend
Cooking spray
Instructions:
In a large pan, on med/high heat, add turkey and veggies and cook until meat is browned and veggies are softened.
Add garlic and cook for about a minute.
Add sloppy joe seasoning and tomato sauce and stir.
Turn heat down to low and let simmer for 5 minutes.
In a medium bowl, mix together cottage cheese, greek yogurt, and cooked rice until well combined.
Spray a 9X13 casserole dish with cooking spray, pour rice mixture in and spread out on the bottom.
Top with sloppy joe meat sauce.
Sprinkle cheese on top of casserole.
Bake uncovered at 350ºF for 20 to 25 minutes.
