Copycat Olive Garden Chicken Scampi Lightened up
I made this lightened up copycat version of Olive Garden's Chicken Scampi for my dinner prep. It was so tasty and a lot less calories and WW points than the restaurant, and also a lot less expensive!
How to Make This:
Ingredients:
8 oz, unprepared Whole grain thin spaghetti
1 lb Chicken breast tenders, hand trimmed boneless skinless, uncooked
1 cup All-purpose flour
1 1⁄4Tbsp Italian seasoning, 1 Tbsp for chicken, 1/4 for veggies
1⁄2 tsp Table salt, to taste for chicken and veggies or about 1/4 tsp for each
1⁄4 tsp Black pepper, or to taste
1 Tbsp Olive oil
1 medium Red bell pepper, sliced
1 medium Yellow bell pepper, sliced
1 medium Green bell pepper, sliced
1 medium Red onion, sliced
1 Tbsp Brummel & Brown Spread Made with Yogurt(or light butter spread)
4 tsp Jarred minced garlic
1 cup Chicken broth
1⁄2 cup White wine 1⁄4 cup
Fat free half-and-half
1⁄2 cup Grated Parmesan cheese
Instructions:
Mix flour and Italian seasoning, salt and pepper in a large bowl. Toss chicken tenders in mixture to fully coat.
Heat olive oil in a large skillet over med-high heat and saute chicken for about 3-4 minutes each side until fully cooked and they reach an internal temp of 165F.
Remove from heat and set aside.
Without wiping pan clean, add bell peppers and onion to skillet, seasoning with Italian seasoning and salt and sautee for about 5 minutes until tender-crisp. Remove from heat and set aside.
Meanwhile, cook pasta in a pot of boiling water on the stove then drain and set aside.
Melt butter spread in skillet, then saute garlic for about 1 minute until fragrant.
Stir in chicken broth, white wine and half and half and bring to a boil.
Stir in parmesan cheese and whisk until fully blended.
Add pasta and veggies to skillet with sauce and gently toss to combine.
Serve with chicken tenders on top.
