Copycat Panera Broccoli Cheese Soup Lightened up
I made this lightened up copycat version of Panera's Broccoli Cheese Soup. It was the perfect cozy comfort food for a cool Fall day!
How to Make This:
Ingredients:
4 cups Broccoli, chopped
1 medium White onion, chopped
1 cup Shredded carrots (I chopped mine into small pieces)
4 Tbsp Brummel & Brown Spread Made with Yogurt
1 1⁄2 cups Chicken broth (I recommend 2-2 1/2 cups for a thinner consistency
1 1⁄2 cups Lucerne Fat free half-and-half
1⁄2 cup Plain fat free Greek yogurt
1⁄4 cup All-purpose flour
1 tsp Table salt
1⁄2 tsp Black pepper
1/8 tsp Red pepper flakes
2 cups Lucerne Finely shredded Mexican four cheese blend
Instructions:
In a large pot on medium/high heat, add in butter spread and let melt.
Add in onions, carrots and broccoli. Cook until softened, about 5-8 minutes.
Once veggies are softened, add in broth, half and half and yogurt and stir in well.
Add flour, pepper and red pepper flakes. Lower heat to medium/low and continue stirring until thickened, about 10 minutes.
Once soup has thickened, add cheese and stir until melted and smooth.
*** Next time I will add 1 more cup of chicken broth for a bit thinner soup.
