Skinny Sheet-Pan Chicken Parmesan
This easy and delicious, high protein, low point Chicken Parmesan is one the whole family will love!
How to Make This:
Ingredients:
3 pounds Uncooked boneless skinless chicken breast
3 heads Broccoli, chopped
2 large EggS
1 1/2 cups Marinara sauce (I used my homemade marinara )
1⁄2 cup Italian style panko bread crumbs
1 cup Shredded part skim mozzarella cheese
1⁄2 cup Grated parmesan cheese
1 tsp Granulated garlic
1⁄2 tsp Table salt- 1/4 tsp for breading, 1/4 tsp for broccoli
3/4 tsp Black pepper-- 1/2 tsp for breading, 1/4 tsp for broccoli
1 tsp Dried parsley
Olive oil 1 tsp, to spritz chicken and broccoli
Instructions:
Cut chicken in halves.
In a medium sized bowl, add and whisk eggs.
In another different medium sized bowl, stir together the breadcrumbs, parmesan, 1/2 pepper, 1/4 tsp salt and granulated garlic.
Dip each chicken breast in the egg mixture, flipping to coat both sides.
Roll the egg covered chicken breast into the breadcrumb mixture.
Place chicken breasts on a lined with parchment paper baking sheet.
Add broccoli on other side of the sheet.
Spritz chicken with olive oil.
Spritz broccoli with olive oil and salt, pepper and sprinkle with granulated garlic.
Bake in preheated oved at 400F for 15 minutes.
Flip chicken and spread marinara and cheese on top.
Sprinkle with parsley.
Bake another 15-20 minutes, or until chicken reaches internal temp. of 165F
