Thanksgiving Dinner Casserole🦃

This Lightened Up WW friendly casserole is one of my favorite ways to use my Thanksgiving turkey leftovers! Its a warm comfort food that has all the flavors of Thanksgiving dinner.

How to Make This:

Ingredients:

  • 1 pound Cooked turkey breast without skin, chopped

  • 6 oz box Stove Top Turkey stuffing mix

  • 1 1⁄2 cups Chicken broth

  • 2 pounds Uncooked potato, diced

  • 3 Tbsp Land O Lakes Light butter spread with canola oil, 1 for veggies, 2 for potatoes

  • 3⁄4 cup Plain fat free Greek yogurt, 1/4 cup for turkey mixture, 1/2 cup for potatoes

  • 1⁄2 tsp Table salt, to taste

  • 1⁄4 tsp Black pepper, to taste

  • 1 tsp Granulated garlic

  • 21 fl oz (2, 10.5 oz cans) Campbell's Condensed Soup 98% Fat free cream of chicken

  • 1⁄2 cup Celery, chopped

  • 1⁄2 cup Onion, chopped

  • 3⁄4 cup Lucerne 2% Milk reduced fat sharp Cheddar shredded cheese

  • Cooking spray


Instructions:

  1. Steam potatoes until fork tender.

  2. Meanwhile, in a medium pot, on medium heat, melt 1 Tbsp of light butter spread.

  3. Add celery and onion and saute until tender, about 5-7 minutes.

  4. Add chicken broth and increase heat to med/high and bring to a boil.

  5. Stir in stuffing, take off heat, and let stand 5 minutes.

  6. After 5 minutes fluff with fork and pour in a 13 x 9-inch baking dish, sprayed with cooking spray.

  7. Evenly spread out. In a large bowl, combine the turkey, soup, garlic powder and 1/4 cup Greek Yogurt.

  8. Pour over stuffing mixture evenly.

  9. When potatoes are fork tender, drain and add remaining Greek yogurt, remaining butter spread, salt and pepper to taste, and mash until nice and smooth.

  10. Add mashed potatoes to the top of turkey mixture, smoothing them.

  11. Top with cheese and Bake at 350 F, uncovered, for about 28-35minutes or until cheese is nice and melted.

  12. Enjoy!
