One Pot EASY Cheesy Taco Soup🧀🌮🍲

I tried out a new recipe this week with this easy one pot taco soup. It was delicious and the perfect cozy comfort food for a cool Fall day!

How to Make This:

Ingredients:

  • 16 oz Uncooked 93% lean ground beef

  • 1 medium Onion, chopped

  • 1 large Bell pepper, chopped

  • 2 tsp Jarred minced garlic

  • 32 oz Swanson Beef Broth, Reduced Sodium

  • 1 can Canned diced tomatoes -14.5 oz

  • 1 cup Fat free salsa

  • 10 oz Rotel Original diced tomatoes & green chilies

  • 2 Tbsp Taco seasoning mix

  • 1 cup Lucerne Fat free half-and-half

  • 1⁄2 cup Plain fat free Greek yogurt

  • 1 1⁄2 cup (6 oz) Lucerne 2% Milk reduced fat sharp Cheddar shredded cheese


Instructions:

  1. In a large pot, cook ground beef, onion and bell pepper on medium heat, until meat is browned and veggies are softened.

  2. Add garlic and cook another minute, until fragrant.

  3. Add in beef broth, tomatoes, rotel, salsa and taco seasoning. Stir well.

  4. Bring to boil and then lower and simmer for 15 minutes.

  5. Add Greek yogurt, half and half and cheddar cheese to the pot.

  6. Stir until cheese is melted.

  7. Enjoy!
